Texas red chili.
I love a bowl of chili but most nights I go the quick and easy route of ground meat, a few cans of beans and doctor it up to taste.
On occasion though, I'll take the time to make a Chile paste from dried anchos and guajillos and slow braise a chuck in it. Damn good bowl of chili.
