Kimchi with BBQ

Yes, I’m aware that Korean BBQ is a thing. That said, the other night I dove into some Offset Smoker BBQ leftovers. I had brisket, jalepeno cheddar sausage and ribs.

A little meat, a dash of sauce, on a small piece of potato roll and then a piece of kimchi. Absolutely ethereal, the kimchi adds an additional depth and spice that was way better than just pickled onions.

A good kim chi goes with anything. Crunchy, crisp, salty, little bit spicy, sour, umami. Even talking about makes me want some kkaduki now.

Kimchiis great with fatty foods especially pork. I like kimchi with bratwursts or any fatty smoked sausage.

i love kimchi but it got ruined for me. got violently ill after eating some once. ever since when i eat kimchi i get a strong gag reflex.

Are there any good brands of Kimchi that are easy to find in the store? I saw that my Walmart has a brand but not sure if any good. I know I will like Kimchi based on similar foods

I put kimchi on fish tacos (fried or blackened) all the time. Unless i'm specifically craving coleslaw, i'll defer to kimchi every time in place of it.

I like the wildbrine kimchi that winn dixe sells, it is on the saltier side though. I think the Cleveland brand sucks

That said, I typically buy mine at the asian market now.

Most pickled stuff is great with bbq. I love jalapeños with brisket. They compliment each other well.

Google your local Asian market, it will be in the refrigerated section. I’ve tried stuff from regular grocery stores, but to be frank they all taste gentrified. I’ve heard that the Korean market on Highland in Baton Rouge sells homemade kimchi, haven’t tried it yet. I bet that could be the case with a lot of other places as well.

The stuff at the Asian markets is the closest to homemade that I’ve ever tasted. My barometer is my buddy’s Korean mom’s kimchi.
