The Bushehr plant risk (potential Iran strikes)

Last week, the agency said it had been informed by Iran about a projectile striking close to the premises of the Bushehr nuclear power plant.

Thankfully no radiation spikes detected so no harm done yet.
If the plant is attacked in such a manner that it causes radioactive fallout the consequences will be severe for Kuwait, Qatar, Bahrain, UAE and Saudi Arabia because of the possibility of water contamination.
Hopefully we have the good sense to leave that off the list of potential targets.

I'd worry more about the regime blowing it themselves when they are about to be overthrown as a final frick you to the people of Iran and everyone else in the region.

Well that's one of the final cards they could play is taking out desalination plants directly

And quicker to rebuild. The idea of attacking generation sources themselves has always been absurd. You can just take out transmission lines down stream and have the same outcome

What’s the time to repair transmission lines compared to replacing transformers, generators, steam turbines, and gas, oil, and coal fired power plants?

Neither is fast but transmission lines would seem to be significantly quicker to repair. You don't need to take out the entire run to cut power.

In the 80's I was tasked in The Hague with negotiating a settlement with Iranian revolutionaries.
The radical powers that be in Iran would rather die and have the country destroyed
than surrender...

This plant can easily be destroyed and have zero of the consequences you mentioned.
I'm not advocating for it's destruction. I'm simply saying it can be destroyed and none of those things have to happen.
