Grouper is delicious and does belong associated w the others listed
I interpreted his comment to mean that Grouper was superior to the others and therefore shouldn’t be compared to them. At least that’s how I feel!

Grouper is superior. Hands down, case closed.
However, if fried, fried grouper and fried catfish are different in taste enough to enjoy them both and I think it’s like comparing apples and oranges.
Tilapia: tilapia is a fish that gained popularity because it is economical to sell (easily farm raised, good meat yield, nice filets, nice firmness, etc.). Restaurants like it because It’s available to any restaurant in any city and It’s basically tasteless, so it won’t have a fishy taste. Tilapia is a flavorless fish that is only on tables because it’s easy to get there. I will never pay for tilapia in a restaurant. Never, ever, order tilapia. Never. If anyone says it’s good it’s because it’s covered in butter and/or seasoning and they aren’t even tasting fish.

Agree. I tend to lose respect for any place that has it on the menu.
Can't remember where it was, but one day I saw a sign outside of a restaurant and they were touting tilipia as their fresh gulf fish of the day.

I feel the same way, my friend. When I ask what the fish special is and they say tilapia, my respect for that restaurant goes down.

Out of your 4 choices. Grouper. Half the board cant read past the subject line.

For fried I like sac au lait, speckled trout, wild catfish and any bream scales and fried whole in seasoned cornmeal. I like small whole catfish fried the same way.
Fried farm raised catfish isn’t bad and they have come a long way in raising them. They are bred to top feed now so they are cleaner. I’ll eat them and if my choices are from the op it’s catfish or nothing. I don’t care for tilapi or swai.
Redfish I’ll grill but I like to make a courtbouillion out of it and flathead catfish. I like to pan sauté salmon or on the green egg to just past rare. I like to cook red snapper in the oven with tomato’s and onions over it or I really like to put some onions maybe some fennel and leeks in the cavity with lemon, salt it and grill over charcoal whole. Man that is good.

Out of those you listed, Grouper and it isn't close.

Most restaurants serve swai and pass it off as something else. Damn shame.
Of the 4 you mentioned, grouper, by far.

Beer battered and fried blows the rest of that list out of the water.

This. Tilapia is the only thing I specifically avoid. When I was growing up, my dad had a 1970's fishing encyclopedia that described all known fish in the world, where to catch them, and how to catch them. I had never heard of tilapia until I was in college. One time when I was home from school, I looked them up. Under tilapia, it said that this is an Egyptian Carp, imported to the US because of it ability to live in stagnant ponds and eat algae. It also said "this fish has no sporting or food value".
