For that texture of ground meat, I understand. In fact, I'd have to stop at rare and dip every bite in ketchup, followed up with a swig of something, every bite.
I love jerky, but, not between 2 buns. But, this is Amurika, at least it used to be.

i used to hold the onions but no more. tough to beat onion and mustard on a burger. i could eat them with nothing else.
and to me the bun is the most important factor. i'm a fan of Hawaiian sweet hamburger buns

Brioche or potato bun. Ground brisket or 73/27 ground beef if I can find it. Patty seasoned with only coarse salt and black pepper right before it hits the heat. Flat top or cast iron only (no grill). Sharp cheddar melted on the beef. Removed when med-rare. No condiments needed, but for this style of burger, I can do a light mayo swipe or something like that. Thick homemade pickles. Raw slice of onion.

Where's the apple pie slice in the burger? Not Merican enough.

I've loosely looked at some local bakeries, but not well enough. Maybe try Ambrosia since they sell lunch items as well?

the perfect burger
The Burger King whopper and a double cheeseburger from McDonald's if both are fresh and built right can hang with most any craft burger.
