Do you ever put crawfish tails in gumbo?

My wife makes gumbo every year, sometimes chicken andouille, sometimes seafood, both incredible

This year its seafood. We were at the market yesterday and they had louisiana crawfish tails at a good price so we got some without a plan what to do with them. She's getting a whole crab, lump crab meat, and shrimp later on to throw in the gumbo.

She's thinking about putting the crawfish tails in the gumbo as well when she puts the crabmeat and shrimp in, but realize that is not traditional.

Does anyone do that?

I never have but I have seen it done elsewhere. I'm good with or without them.

When I make my seafood gumbo I use shrimp, gumbo crabs, crawfish tails, oysters and bay scallops as the protein.

It ain't cheap, but it's damn good.

Forgot to mention. Gumbo crabs go in at the onset and all the rest go in right at the end so they don't overcook.

I also use shrimp stock and oyster liquor as a base over the roux and trinity.

Yes we already have gumbo crabs I think and put that in at the onset.

My wife is pretty adept at this.

Just never done the crawfish tails

I’ve never done crawfish tails, but gumbo isn’t that far off from crawfish bisque and that is good, so I don’t see the problem with it.

I've had seafood gumbo with crawfish tails in it. I don't prefer it, but it's okay. I'd rather have the traditional seafoods with no meats mixed in. Everyone has their preferences as we all know!

I’ve been wanting to but I’ve always worried about all the fat that comes in the packs. I think the fat would alter the gumbo flavor too much. I was thinking of rinsing the tail meat off first but I’m not sure how the restaurants do it. I’ve had it in restaurants gumbos and liked it but I don’t think they used all the fat.

Jarreau’s restaurant has more crawfish tails than anything else in their seafood gumbo and it’s damn good.

I’d use em along with shrimp tails to make a stock, then strain before adding to roux. Nvm. For some reason I was thinking shells.

Sure, why not add crawfish tails?

That’s the best part.

They are an inexpensive way to add some meat to the gumbo. I’ve done it a few times and it’s fine with me. Personally I prefer just a shrimp gumbo but there aren’t many I will push away from my mouth.
