The reason is that they're not 'popular' in the North, is because the weather is too in-climate to bread them to be anywhere near cost effective.
I've been to places all over the North that have them, but generally not served by the pound.
We have a shite-ton of clam bakes and shite like that though...

Also, anytime I eat a hamburger I have to have a plate with just mayonnaise on it so I can dip the burger in it by each bite.

Of course, I understand this reason. Makes sense. I'm just saying because of the fact that crawfish aren't so available, I've seen lots of people from the North sort of "disgusted" by the thought of eating crawfish. As if they aren't considered seafood and are considered an insect. Seriously, I have heard them referred to as insects. Typically women though.
I also can't stand when people say "crayfish". Even if it is the scientifically correct term, in Louisiana its "crawfish". You can call it whatever you want in your own state.

I was in Hilton Head recently and they served she-crab soup at the boil. It was AWESOME.
