I've watched the movies so many times I cannot count and something has always bothered me.
After Paulie sold out the Don to Solozzo, he was shot and left in the car with the gun - but without the canolli.
How could his murder not be linked back to the Corleone family through the gun and\or car?
Was the family that powerful with the police that they were not concerned?

It's established that Clemenza can get a non-traceable gun via the one Michael used. It's not a stretch that with their extensive network they could get a non-traceable car. Plus, they have the police connections, as noted.

Yes, dont get caught later with the murder weapon. Although not sure what ballistics were like back then.

It's Paulie's car. Clemenza and the shooter are wearing gloves, hats, overcoats, etc. They didn't leave any traceable evidence behind. And as for the gun? The mob had untraceable guns back then and now and at all times in between. Michael uses just such a gun in the restaurant.

The gun is more or less explained same way as Michael’s gun.
For the car, in the books there are several times when they say “don’t use your own car.” And I’m sure tracing every car to an owner was not as easy back then as it is now.
