Mercenaries like to hoard money. Might have been a good pick. Seems like most of his ambition was to have a title and power. He has both. No reason for him to betray his duties to potentially ruin that chance. Plus Bran sees everything.

Sure looked like most walls were intact to me. Would have taken a lot of effort to torch the entire exterior that was used to torch the actual city.
Besides, if you are willing to have this conversation, it would be pretty easy to starve these guys out if they are just hanging out in kings landing with zero support

She rode the horse out of the city to end episode 5 and then showed back up right next to Jon, all the way at the Red Keep, to start episode 6.
After that, Jon walks away from Greyworm who's slitting throats in the street only to walk up the stairs of the Red Keep to see Greyworm waiting for him. Apparently Greyworm is like the butler from Mr. Deeds.
