Idk if this is stated, im usually really bad with peoples names in shows, but are we to assume the old man carved the wooden box and got his hands crushed?

Well you don't have to assume it. That is what happened. He carved the box, and the master crushed his hands.

The novel doesn't really describe him in great detail. One way they did stray from the book is by giving the vampires ears. In the novel, their ears fall off like their noses do. Overall, I think he looks kind of goofy, but they went with the typical "Nosferatu" vampire look.

I wish they would have gone to the vampire hunting aspect sooner. I thought the first few episodes moved a little slowly.
I want to learn more about that other group of vampires that are hunting down the evil ones.

That was the Master infecting him with one of the worms to transform him into a vampire. Much better way to do it and I'd imagine less scaring then sucking on his neck.
