A lot of “x” factors there.
I have 7 kids. 128k is a very decent living for a single dude but for me it would be a little struggle.
Location is also a big player.

I’m assuming two cars. It’s just a random assumption people. It cost money to have two basic under $20k cars, insure them, and maintenance them. Tires every few years, etc.

People will give you grief for questioning life on 128k here. And I think it's awesome if people live comfortably on that or less.
But when you consider how the "standard" for living in the US has increased - how people get engaged, the weddings they throw, the trips they take, the stuff they have, etc. - It's no surprise people would struggle.
And increasingly, some of it is pretty legit. Education costs, healthcare, inflation, etc. are very real.

That’s what it costs to eat out with a family of 4. I’m typically over $50 at fast foods/ fast casual places and over $110 or so if we sit down and tip out a server.

Not too far in the past, I was single, paying a mortgage on a new 3 bed, 2 bath house, had two vehicles that I paid cash for (used but well maintained), and had enough extra to do whatever I wanted (within reason) on $45k a year. I was living about 30 miles outside of Springfield, MO at this time.
OT poor I know but life was good in my opinion, I didn't feel deprived of anything.
