Second verse in original song from Louisiana supergroup Lil' Band o' Gold (who backed and recorded with Robert Plant when he was here post-Katrina doing Fats Domino tribute album) says "Sah-bean":

So deep etx and east of the river pronounce it sab-een. Then the rest of everyone says it the other way. Suh bean.

Yah I got a grand pappy (unrelated) from the area and he always said it sah-bean, but he was a transplant from east texas

Yeah i had to look on the map to see where Sabine Parish is, but that's right across the river from the general area I was thinking of. I guess people in Sabine County and Sabine Parish talk the same way. Toledo Bend area.

People pronounce it all a few different ways. If you're in East Central LA, they say "Sab-een". If you're in Many or Sabine Parish, it's Suh-been".

Sabine is derived from the Spanish word Sabinas which means junipers which is what they were calling the cypress trees back then.

This is the only way I’ve ever heard people from the area pronounce it. I’ve been around NW LA all my life, and I’ve known plenty of people who lived in Many, Zwolle, Pleasant Hill, etc. in Sabine Parish. They all said suh-bean, and I never even considered that there was any other pronunciation.

Someone can always mangle anything. Yankees will see Caddo Parish in writing and call it Kay-Doe County.

Its strange that there is not a universal pronunciation for a major river like this. I mean for the people who live near the river. For transplants from out of state or across the state its understandable.
