Im on point again with the turkey this year and it was cold as hell getting that bird prepped this morning!
I switched to spatchcocked where you cut the spine out and lay it flat for the cook last year and can’t recommend it enough.
Its cut hours off the smoke time and helped me to get the different sections cooked more evenly and without drying out a 20lb+ bird on a 8-10 hour smoke.
Presents a little differently but still looks great if not better on the table, I suggest giving it a shot and good luck to all of those trying to time their birds today.
And lastly, while we all here feel very strongly about politics… consider letting the trolling slide this year with the family. Having lost family members you never know what might end up being your last opportunity to catch up.

Just got my turkey on. It's an ordeal with brining for 24 hours, days of defrosting and then the rub and getting the smoker ready. Not sure how I inherited this except for the one time I did it when my mother in law couldn't (she always baked the cardboard in the oven). But, Happy Thanksgiving to all and thanks to Mr NC_ for getting it started.

They shared roasted turkey, stuffing, pumpkin pie, and gratitude, launching a timeless American tradition to be celebrated by countless prideful American families confirming their kindness and destined ownership of all lands the quiet and peaceful Natives left behind for them. The original American holiday of Thanksgiving was born onto our great nation for all to pass onto generations to remember the unequivocal kindness and sharing our founding first Americans graced the simple Natives with.

Happy Thanksgiving, all. Thankful to be spending the day with my GF’s family this year and not cooking. Looking particularly forward to turkey, spinach Madeline , cornbread dressing and pecan pie. Peace and thanksgiving to all PT’ers.
