Oh man selfhosting (if you're into such things) is good stuff. I often call it my digital ant farm. Half of the fun is setting it up and tinkering with it. The benefit of this hobby is that you get functional and useful services as an output. Look into proxmox. In layman's terms its a way to split your hardware into multiple servers so you can do multiple different things. In technical terms it's a free and open source hypervisor you can spin up VMs and containers and also easily join multiple computers together so you can move those VMs around. My "main" box is basically an old desktop computer, but its probably at least 8yo. The other two nodes in my cluster are little tiny micro pcs I basically saved from a trash bin. If you're careful with your resource allocation you can do a lot with old hardware.

Truenas is also a good option with a GUI to help you get started faster.
I run proxmox now but learned the ropes in truenas, which was formally freenas.

I run home assistant in a dedicated raspberry pi but you could easily run it on your hypervisor along with everything else.

What are you thinking for NVR software? Blue Iris and frigate are both solid options

Definitely the most beginner friendly option, especially since it's a zfs solution at its core with some containerization benefits

What my goal is with the cameras is that I want them on a LAN and then a way for me to to remote in and see them away from home. I'm thinking that's the most secure option but not completely secure

I use autoBRR with IPT in my setup. It doesn't do as much as sonarr or radarr but I'm not out just grabbing anything and everything. I only have a handful of watch filters.

I was of same mindset using sonarr/radarr and just being mindful to check and get latest episodes each week. Ive since moved my media stack and plex to docker and have added overseerr. It really is handsoff for most part, and has saved me time with going this route.
