Thank you for such a detailed response and recommendation. Will definitely take a look. Believe we're definitely going in July, because we definitely do want to go to Bend and it sounds like we'll be making time for Crater Lake as well.
Believe we'll fly in, spend one night east of Portland - not sure if we'll make it all the way to Hood River, or if we'll stop short -- flights are all later so we'll be getting in near dark. Go to Bend for 3 (possibly 4) nights, drive to Crater Lake for one night, drive to either Florence or Yachats and stay for a night (or two), drive to Newport and stay for a night (or two) -- should Florence/Yachats get the two nights or should Newport, planning to just stay 3 total nights in the area? Drive to Cannon Beach and stay two nights (or three?) and then one night closer to Portland
Any recommendations on wineries? Wife would like to do a half day tour.

Haha. We went to southern California (La Jolla, Laguna, etc.) last summer. We landed back in Memphis around midnight and sweated more walking to our car from the airport than we did the entire week in CA. I say that to say - we're definitely planning this trip with the weather in mind and wanting to go somewhere to get a little break from the heat!

Believe we've settled on July. Since we've never been, we'd rather spend a little extra money to try and get the best experience, vs. rolling the dice. We'll probably get soaked all week but alas.

Beaverton may be the place on the tail end of our trip - thanks for this. Our plan is to spend that last night closer to Portland, with the plan to do a winery or two (or for my wife too while me and the kids do something else). Any winery recommendations, or just general recommendations?

We've got two young kids (2 & 5), so anything that's kid friendly (but that the the adults would enjoy as well are always appreciated). We also love italian food, breweries, and ice cream. I love to hike, but our kids are a little small (we do have a backpack carrier for our littlest), so any easier hiking ideas would be great.
Would a jeep be worth the extra rental price? We rented one in southern California last summer and it was definitely worth it. Not sure if it'll be to cold/windy in Oregon though.

It’s the only place you can buy them. 2 stops I always make when in Tillamook…..the cheese factory for curds and de Garde brewing for world class sours.

If you go to Bend go to Crux brewery. Family friendly with a huge outdoor area and has a view of the 3 Sisters, Broken Top, and Mt. Bachelor mountains.
There are a few food carts on the property and the best one is El Sancho tacos. They’re flipping good! They also have a brick and mortar location in town.
Lots of breweries but that’s the best one for the fam that has great beer and everything you need in one stop.
Float the Deschutes River. It starts at Riverbend park. There’s a trailer setup that rents tubes and there’s a shuttle that brings people back up river from the take out point.
It’s a good time. If you bring a floating cooler you can pack it with adult beverages.

It’s slow the whole time except when you go through the man made rapids which you’ll enjoy. So much so you’ll want to pull out and walk up and do it again which you can. Your rental has a 2 hour window to return and you’ll have time for at least a 2nd time. Typically the float is 75-90 min depending on the flow.

Awesome, we'll plan on doing that. Our 5 year old will absolutely love it (and so would we), especially if she can get her own tube.

If the lodge is full, check a few times daily. There is zero penalty for cancelling reservations so people book and cancel constantly. If you are diligent you can scoop up a night

I want to explain to everyone that the ice cream at the Tillamook Creamery is different than the Tillamook ice cream you buy in the store. It's just better. Not sure how to explain it. It must be the freshness, but whatever it is, do not miss it.
If in Portland, the ice cream shop that people talk about is Salt and Straw. They have a lot of unique flavors and some of them may sound odd, with flavors like olive oil and blue cheese. I had Turkey, dressing, and yam flavored ice cream there, once, and it was actually great.
Finally, many of the breweries in Portland are family friendly and serve outstanding food. You can get a great meal at breweries like Deschutes, Great Notion, Breakside, etc.
You should probably go to a McMenamin's location at least once while you're in Oregon. They all serve a similar menu, but each location is unique. Look them up online - some of the locations are in old churches, schools, movie theatres, barns, hotels, etc. They renovate them to period and they are an interesting place to eat and drink. They serve their own wine, beer, and hard liquor, as well. Many of them brew beer on site, but the wine and spirits come mostly from their Edgefield Resort. The food is pretty good, but the atmosphere is fun and the kids will enjoy it. I might suggest Cornelius Pass Roadhouse, if you're staying in Beaverton, or the Kennedy School if you're in Portland, proper.

I’m jelly. We’ve had the longest cold snap that I can remember. Not much rain which is a plus but not really because of the lack of a real snowpack. I’m ready for an umbrella drink on a warm beach with blue water.
