Anyone have a particular recommendation, or does it really matter?
Never used one but wanted to get one and start, will any of these $80-100 ones on Amazon work or are there things I should be looking for?

I have an Anova which has been flawless. To be honest I’d be perfectly happy with one that was a bit lower tech. I dont ever use the blue tooth or app for it.

Second the Anova, I left one with the ex, and then bought another Anova. I have used the bluetooth feature, essentially to hit "start" on my most popular recipes to cook which I stored in the app.

I have a basic Anovo and it has been great even after being dropped a couple of times.

The Anovo it is, any recs for a basic vacuum sealer?
I am wanting to get more into processing my own game so don't mind paying for a solid unit since it will be dual purpose (sous vide and game processing).

I have a basic foodsaver. Nothing fancy.

I've had two FoodSavers, and use third party rolls for the packaging. Make sure it's a model that has at least basic moisture/juice control. Even if you take a pork loin, pat it dry, and try to seal it, and you'd be surprised how much juice starts getting sucked in.

I have an Anova and it's been a workhorse for a few years now. Though Anova pulled a big FU to it's customers and now requires a paid subscription to use the app and remotely control the sous vide. You can still manually set it at least.
The other option is the Breville Joule.

I’ve had a few models. The Joule is small and convenient, but scale buildup on the rotor causes the motor to falter. It’s also app-only which is not great. I have a really old PolyScience workhorse that is good. And i have a new PolyScience/Breville HydroPro which is top notch but very pricey. The Breville Sous Vide Professional looks very good and basic.

I have an Anova Pro, it does great work. I never use the app so that doesn't bother me.

I had an Anova for 5 years, now I have whatever owns the instant pot. It was far cheaper and it works fine.
I think there is not a huge difference outside of timing to get to temp

Same here. I use mine at least once a month and I like it. I don't bother with the blue tooth or app either. It's just so simple and easy to just use the device's interface.

I like my Anova Pro. Does not need wifi or an app to work, although if you have it, you can operate it that way too.
Do not get the Joule. I had one that broke with only light use, and it was always placed back in the box for storage. The cheap plastic insert that the base screws into broke in half rendering the unit unusable. I spent a lot of time trying to get them to repair or cover it, and because it was a gift, they would do nothing to help.
Unlike the Anova Pro, the Joule could only be operated with wifi or bluetooth through an app. A pain in the butt if you were in a remote area with no service or phone.

same. I don't think I've ever used the wifi other than maybe testing it out. Some things just don't need apps, and this is one of those. Just get it to temp and set a timer on one of the 5 other timers you have around your person or the kitchen.
Also, i have the nano and have never needed anything larger.
