Baked potatoes?

How do you make the skin on a baked potatter kick arse like it does in Outback and other fine dining establishments? Tia.

Clean potato, pierce with fork all around, rub with olive oil, roll in montreal steak seasoning or sea salt & cracked pepper. Cover in foil and bake @ 375 for about an hour or so depending on size.

Boil tater till soft (not to soft or it will break apart. Roll in butter and Kosher salt. Wrap in foil back 350 till steaks are done. Enjoy

Clean your potato, use any kind of oil (I prefer olive oil), roll in melted butter (real butter) and then dip in kosher salt. Wrap in aluminum foil and bake.

pierce skin with fork, oilve oil,butter,kosher salt NO foil, bake in Iron skillet in over at 375 until tender as you like w/crispy skin. Iron skillet does the trick.

This is how Outback does it:
Wash potato, coat in melted margarin, roll in kosher salt, bake at 350 for 1 hour in a convection oven (maybe 15 min longer in non convection. No foil, oil, piercing the potato required. Very easy. The salt draws the moister out of the potato to make it fluffier on the inside.

Me thinks you folks saying to wrap it in foil are just going off of what your mom did. It really does not help the potato in any way.
