I'd wager you're vastly underestimating overhead. Average net profit on catering looks to be 7-8%. Still, $125/gallon, whether justified by costs or not, is too damn high to pay for gumbo.
All cajun food seems to be reaching that point. What our ancestors ate, and made delicious, out of necessity because it was dirt cheap is now being priced as a luxury food. As much as it pains me to say, most of it simply isn't worth the prices being charged, relatively speaking to what you can otherwise get for similar prices.

The organic bird was more expensive. Maybe it said Free Range in fine print, but I didn't see it. Those were the only two kinds they had.
Yeah, I can get a 5 lb whole chicken at Smith's (aka Kroger) in Santa Fe for under $6. My wife doesn't eat meat so I can get a 3.5 - 4 lb bird at Market Street for under $4. A 6 - 7lb air chilled whole chicken at Market Street is pushing $20+ so they started selling half chickens which are still like $12.

Hopefully, things will turn around with a new Sheriff in town.
If you think the average price of chicken or Cheerios or your favorite butt plug is gonna be any cheaper a year from now(aside from the odd manager’s special), I’ve got some grape Flavor-aid to sell you.

I did an on-line search and could only find a couple places that mentioned price and one was $56 for two 1 qt. containers of chicken/sausage/okra gumbo and the other was just a shade cheaper for the same amount.
So, $112+ tax for one and slightly less for the other. I make a great gumbo and not skimp on anything in it for right at $20 a gallon.
Now, if talking seafood gumbo, that's another story all-together with the price of crabs, oysters, shrimp, etc. That stuff can get $$$$ quick.

Didn't we have the $10 gumbo challenge on here awhile back? Seeing if you could pull off a pot of chicken and sausage gumbo for under $10?
ISTR the .29 cents a lb leg quarters was key because it also doubled as the stock.
Entirely doable once upon a time but not with current inflation.

I just estimated mine, and it’s something like $20-$25 per gallon.

quote:Not for mine. A gumbo that starts with 8 cups of stock with andouille and chicken seems to run about $25. I've never measured buy once everything is in it's probably a gallon.
I figure just under $20 a gallon for the ingredients
