What to do with Zucchini?

My favorite snack to make with Zucchini is fairly simple and delicious. Start with a whole zucchini, thinly slice, toss with salt, pepper, and olive oil in a bowl. Turn your gas stove on as low as it’ll go (don’t simmer) and spread zucchini. Cook until chips become slightly crispy. End result looks something like this.

P.S. if you really want to make it fancy, some freshly graded Parmesan Reggiano pairs exquisitely with this.

This is a great idea. Baking a bread with it is about all I do though.

I just made a lasagna with zucchini in lieu of noodles and cottage cheese in lieu of ricotta. It was great

That's one of my go-to recipes. Another is to cut them across in about 1/2 in. slices and use them with other veggies and some marinated pork tenderloin cubes and make kebabs.

I also use them diced in vegetable/beef soup.

One of my wife's aunts pickles them and they turn out good, but I've never done that.

Zucchini, mushroom and onion tossed together and lightly sautéed in a frying pan makes a really good side dish.

Eta- seasoned with garlic pepper or whatever you prefer

I grill planks like some have said. A little toasted sesame oil and even toasted sesame seeds on them is nice.

Wife cuts them into rounds, thicker than your chips, and hits with a little olive oil and S&P. Air fryer for a few minutes, then top each with some grated parmesan, and cook a little longer to melt. Pretty darned good.

I recently made a zuke pasta dish from Milk Street that was good but not great.

Favorite way to eat them for me is sautéed zucchini noodles. Spiralize, then salt and let sit about 30 minutes. Drain and sauté in olive oil with some garlic.

im not gonna lie. fried zuchinni is one my favorite ways to eat them. im not much on deep frying veggies but they are perfect for it.

LINKChicken Parmesan Zucchini boats. Halve them, scoop out to make a boat, fill with ground chicken in sauce of your choice, top with Parmesan and mozzarella, and bake for 25-30 minutes. Delicious.

Have done this with taco meat and cheese, and meatballs and sauce. Both are delicious.

I also like to slice and stew them in chicken broth with a rough chopped onion.

I like making the hibachi style veggies with zucchini.

1/2" dice zuc
1/4" onion wedges
matchstick carrots
sauteed with a lil oil

when nearly done add about a 1/2C of mixture of soy sauce, sesame oil, and mirin (mixed to taste)
