update ... got a reservation for Sunday. Three hour tasting for $150 a person. Not too bad.

What is the term? List is shite.
No Osteria Francescana in the top 50 when it is every bit as good as Noma, IME better, Botturo is crying. Plus they have Lido 84 and Piazza Duomo, La Calandre and Reale in the list having left out Osteria Francescana and La Pergola from the Italian listees.
They have Cosme, Artiler Crenn, Benu, Single Thread, Atomix, and La Bernardin from the US and no French Laundry.
I have no idea how Osteria Francescana isn't even in their top 5 much less their entire top 100 the same as neither of Keller's 3-star restaurants (The French Laundry and Per Se) being in the top 100 with multiple US restaurants including Atomix and Cosme is baffling.

They started a new thing a few years ago where if you win number one, you become added to a “Best of the Best” list and you’re no longer eligible to be on the list. It’s to prevent the same restaurants from always being at the top. Same reason you don’t see Eleven Madison or TFL on the list.
Having been to OF, I would share in your rage if they were otherwise left out of the list.

I might be in the minority here, but this does not do it for me.
To each their own, but if this shows up at the table (for what I assume an astronomical price tag) I'm going to be pissed.

feel like so much of these ratings is more based on artistry of the plate and technique than the actual taste.

We've got a reservation at Maximo Bistrot also. That's probably it for high end restaurants in Mexico City though, want to make sure we save time and appetite for street food and casual places since that's such a big part of their food culture.

Most of these places focus way more on presentation & creativity than on actual flavor of the food IMO. Went to El Cellar de Con Roca, Mugaritz & Tickets a few years back.
Mugaritz was insultingly bad and expensive as shite
El Cellar was good but didn’t live up to the hype and also expensive as Shite
Tickets was the best meal I’ve ever had and not pretentious at all. The restaurant is built like a fun house or carnival and the food is approachable and delicious af

Le Bernardin several times and Chef Eric does things with fish that are magical...monkfish wow was that a treat..he's been most consistent high performing chef on that list....over 20 yrs...

The only one I have been to on this list is #12, Steirereck in Vienna. It was outstanding.
I usually recognize 3 or 4 of them that I have been to but the others have dropped off. The two best meals I have ever had were at Guy Savoy in Paris but they are no longer on the list. Eleven Madison Park is not on it anymore (they have gone vegan).
The first Michelin *** I ever went to was Taillevent in Paris which used to be at the top of these lists. That was about 20 years ago and is still one of the most memorable dining experiences I have ever had.

Two things:
1. By rule they are no longer on the list because they were recently No.1 so they are now on the Best of the Best list (see my post from earlier)
2. They went vegetarian, not vegan. EDIT: I stand corrected! They did go vegan. Just did a quick google search and I was wrong.
