This is how the guy will (hopefully) make his living. He's got his ring and a ton of memories. All it takes is one knee injury and his stock and value can drop. It's his life, his decision. But it's pretty high risk, especially given the position he plays.
You get to be naive and idealistic-NFL GM's/coaches/personnel? The don't give 2 shits. There are more just like him and if he's hurt or damaged, frick 'em.

He’d go second round so the NFL team wouldn't have a 5th year option. He could get some real guaranteed money after 3 years. This seems like a really bad move.
