What are the odds of getting one more portal transfer before portal deadline of 11 p.m.?

The players just have to declare their intent to enter the portal by tonight. They don’t have to sign by the deadline.

That is the deadline for players to enter the portal. They are still free to sign with teams after the deadline.

LSU can sign 5+ more players tomorrow if they want, those players have to be in the portal before midnight or they're not eligible

My understanding is that you are correct as far as entering the portal.
I read that the deadline to sign to a school is based on the Spring semester enrollment deadline by the college where they mutually agree to sign.. Otherwise, they would have to enroll in the summer semester.
Not sure what the deadline is for the LSU Spring Semester?

Get ready for eleventy thousand responses telling you the deadline is only for players to declare they are entering the portal not the deadline for LSU to sign players from the portal.

The deadline to sign is whenever, but to participate in spring practice with the team, you have to be enrolled. LSU has three spring semesters. The regular spring semester and the first accelerated spring semester have a deadline of January 22nd, I think. The second accelerated Spring semester has a deadline of March 20th, I think.
