But that’s exactly what happened anyways. The sail barge flotilla was blown to shite by several notable Rebel Generals.

Wasn’t the rebel fleet already off Tattoine at the end of ESB in the closing shot when Lando and Chewie take the Falcon down and Luke/Leia look on from the medical frigate? Or was that another planet

They were at a place called Haven, which they used as their rendezvous point after the Battle of Hoth.
According to Wookiepedia, Haven is located at grid M-20 on the map below. On this map Tatooine is located at R-16. Both are circled in red.

Jabba the Hutt was not a warlord, he was a mobster and a criminal. If the Rebels had decided to conduct something like a full-on invasion of Tatooine to try and save Han, he would most likely have simply vanished to some hideout he kept prepared for just such an occasion and waited for them to go away - and if that didn't work he would have just threatened to liquidate Han if they didn't leave him be. Infiltrating his organization was really the only option to get Han out alive.

Often the only way to get a hostage out ALIVE is covert and tactical. It made sense.

The more interesting question is- suppose Jabba was more pragmatic, and decided to give Han back to Luke? What then? At that point, Jabba already had Chewie and Leia too, and Luke had just given him the droids. Does Luke go back on his "Jedi honor" to free the rest? If so, does that push him over to the Dark Side?

If that had happened then I could see things playing out a number of different ways, but the most likely would be that Luke/the Rebellion would simply bargain with Jabba (probably through an intermediary) to purchase the freedom of the other prisoners. The difference in Han's case was that Jabba took his "betrayal" personally and so wasn't willing to entertain offers for his release, but with Chewie and Leia and the droids that probably wouldn't be the case. If Jabba for some reason didn't want to deal, well, they still had Lando on the inside if they needed to break them out.

I never really pondered the subject, but a simple explanation could be that extracting Han was more akin to a special operations mission, requiring a small specialized team. In the US military, my understanding is that only JSOC units (Delta and 6) get assigned hostage rescue missions. Luke, Leia, Chewy, Han and Lando + the droids were the right team for the job.
If you'd like to explore this topic (Hostage Rescue not Star Wars), read up on Operation Acid Gambit, a hostage rescue mission executed by Delta Force during the Panamanian invasion in '89 to extract a CIA Officer who had been taken prisoner prior to the invasion. JSOC units have conducted multiple hostage rescue missions since 9/11, but Acid Gambit (at the time) was the first real hostage rescue op since at least Vietnam.
