Delta State's Fighting Okra is pretty hard to beat.

They formally requested permission from Charles Schulz a long time ago when his Snoopy Red Barron character first appeared. Permission was granted with no consideration (money).
I don't know if it was a mistake or charitable but it seems he granted it before he understood how successful peanuts would be and especially how iconic the Snoopy Red Barron would be.
To my knowledge no other school has a mascot of any Peanuts character.
Funny story, I was a Freshmen Wampus Cat at Leesville High and ended up graduating from Loyola in Shreveport. So I've had my share of odd high school mascots.
