there is plenty of fat in crawfish. Butter does nothing but give you skum at your waterline. and its a waste of butter...butter is better used else where.

My Texas crew is starting to come around to it. My first ever boil here we had 40 people and i had so many left over from 2 sacks i thought my fingers were going to bleed from peeling them.
Fast forward three years and the same crew crushed 4 sacks with zero left overs.

A couple in our neighborhood own LA Crawfish. She is Viet and the man is a regular white guy and a battalion chief with HFD, if I’m not mistaken.

M & M Fruge own Fruge Aqua Farms and have been shipping to Dallas for 25 years. Mike also has a restaurant and at one time he would fly his plane up once a week to Dallas.

they have been growing rice here in texas since the 1850s

True, but the Houston demand is so great we are only able to supply a small % her in the triangle, most of the crawfish in Houston are out of LA. It’s a huge market. Not to mention the “Crawfish Mafia” over in LA sets wholesale prices for the entire Gulf Coast.

It varies year to year as we try places that friends recommend. I was talking about Woodson’s on 1488 with the loaded option and those cheese ravioli mixed in.
