You know absolutely nothing about Louisiana if you don’t already know the answer to this question.
South Louisiana and North Louisiana are completely and totally different culturally. The cuisine is totally different, and the two regions might as well be two different states.
North Louisiana is not Cajun.

South Louisiana dishes often involve so much spice you can’t taste the food. North Louisiana you taste the food, but there are no spices.

I regularly have to tell people that shrimp doesn’t go in chicken and sausage gumbo, sausage doesn’t go in seafood gumbo, and tomatoes belong in neither.
N LA folks don’t have a damn clue what good jambalaya is. When it’s on the “soups” menu, you don’t know wtf jambalaya even is (Looking at you Trapp’s).
Roux is made with love, not a jar. Don’t get me started on the bland arse red runner from a can red beans.
If it remotely says Cajun in N Louisiana, take a fricking pass.
Is there good food here: yes.
Is there good Cajun food here: no
ETA: I regularly have to explain to people here that just because you are from Louisiana, that does not make you Cajun.

I’m from Shreveport. My wife and all her kin are from Crowley, Mamou, and Scott.
Biggest differences I see are up north is more potato’s and cornbread. South is more Rice and biscuits. North Seafood is more catfish and frog legs and south is that plus so much more.
I definitely won’t argue that the south beats the north in overall cuisine but let’s not pretend there isn’t good food in North Louisiana. I can name you a number of good soul food restaurants with plenty of good eating.

Except that’s not true at all. There’s plenty of South LA culture that has influenced and affected New Orleans

i've spent a ton of time in both NLa and SLa, with family in both places as well, and i agree with all of this...
NLa has some good stuff, it's just different and good in it own way... but it's not comparable to SLa, which is totally unique on a national level
