I mean this is kind of cool and all but to be clear this is a massive gift to the MIC using old technology with the express purpose of corporate welfare. Why are taxpayers blowing $100 billion+ on a rocket that will be used exactly once? Or maybe the right defense contractors just need some money in their pocket?

Correct. These things happen in stages when testing new crafts. Take the Apollo program:

Apollo 7: first manned test of the Apollo command and service module in earth orbit.

Apollo 8: first manned test of the Apollo command and service module in lunar orbit.

Apollo 9: first manned test of the Apollo lunar module in earth orbit.

Apollo 10: first manned test of the Apollo lunar module in lunar orbit.

Apollo 11: first manned mission to land on the moon.

The next moon landing is planned for the Artemis III mission, which is expected to occur no earlier than mid-2027.

Artemis 1 was unmanned. It did a lot of things this mission will do but Artemis 2 will do more.

I think Artemis 2 will take humans farther from earth than ever before. Doesn't Apollo 13 currently hold the record?

Honestly it will be the first time in many of our lifetimes. The only one I was alive for was the repurposed rocket used for Skylab.

It will also be amazing to see live HD video of the moon. (Yes I know there's a short delay in the live signal getting back to earth.... possibly shorter thanks to Elon.) A real visual punch to the eye...

Any rocket launch along the coast is amazing to see. I watched the first shuttle up after Columbia from Cocoa Beach. I've also watched star link launches from Daytona Beach. 20+ years ago watching them from Orlando was great (especially night launches) and I remember watching Columbia go up from my office in Heathrow (and lack of sonic booms at 8am on that fateful day).

Anything with space is something that will awe even the most uncurious of people. If you're there you absolutely need to make it a priority... even if it is must on the beach.
