The closest actual hills to Bryan, TX are in Gause, TX (About 25 miles)

Sugarloaf Mountain is there which is a sacred Native American spot.

Jimbo actually lived on an adjacent hill from it.

Those are quite tender. You just get a pot of plain water with maybe some butter boiling, dip the basket of crawfish in for max 1 minute. Take it out immediately, sprinkle the crawfish lightly with some corse sea salt, peel and eat. Melts in your mouth like rich butter.

Farmer price right now is $5lb out the field. I would expect the catch to increase over the next week. The next 10 days highs are gonna be in the mid 70s and lows in low 50s. The price should start falling slowly as we get to and through lent. How much will it drop, will depend on production.

The only time I've eaten crawfish in January it was given to us for free. Actually the only reason it was free was because we were with Fr. Beard and everyone loved that guy.

There's quite a few of us from Louisiana living in Texas, so good boils can be found. That said, it's not easy to find them boiled right. My wife is a true Texan and loves crawfish. She thought she knew what good crawfish was until she got some cajun in her. For several years now, she won't eat anyone else's crawfish.

My suppliers said the ponds are full full this year. Just need time to get bigger. And workers to farm them.
