Sounds like you need insulation and a more efficient AC system.
3400 sq/ft with pool and keep AC 70 day and 68 night and I'm sub 300 month.

Well, in all honesty, it's not JUST the A/C. How many windows do you have and are they double paned energy efficient types? What about insulation in the walls and attic spaces----is it sufficient? What about attic ventilation?
Do you have more than one unit as I assume you will with that big a house?
What temperature do you set the thermostat? If it's 90+ outside with a "Feels Like" temperature in the 110 range, you are asking a lot to cool a house that size in the mid 70's range.
High ceilings mean more cubic footage needing to be cooled per room. How often are you and the rest in and out of the house leaving doors open???

For May, mine is about this for 3700 ft, upstairs and two large AC units and a pool. I expect the remainder of the sumer to be higher.

Talking about windows: south and west facing should have draperies with black out and insulated liners. Why? To keep the heat out of the room. Solar heating is a real thing.
You didn't mention ceiling fans. Ceiling fans will make 82F feel like 75F.
Do you, for the long run, have trees growing so that your house will be shaded in the hot months?
I live in East Tennessee. We have ceiling fans, some windows with black out lined drapes, and lots of large trees to the south and west of the 4,000 foot house. We haven't turned the A.C. on yet this year, but probably will for the end of this week.
When we rebuilt this old farm house and added to it, we wanted bright rooms to take advantage of a great set of views we have. We built overhangs to keep summer sun off of some windows, and lots of ways to get breezes to cool the house.
In previous homes, if we didn't use a room, it got its a.c. blocked until it was needed,

3,000+ SF 2-story plus finished basement and a pool. 3 A/C units and never had a monthly bill over $300. We did invest in new windows and it makes a significant impact.

I thought the house you bought in Spring was relatively new?
Did your wife sign you up for a mostly "renewable plan" while she was at H-E-B? Did your contract rate expire and now you're paying the max rate off contract? I *almost* had a bill like that, once, in a 5300 square foot house in almost a decade.
Tint all your windows that get any sun exposure at all. It'll pay for itself by October with what you're paying.
