Been hammering the white bass at Toledo bend, I’ve never cooked them, any tips on cooking them?

Same as anything else as long as they are fresh. Seems like they get really strong taste after freezing.

Cut every single but of red off of the filet. If you do, it'll be really good.

I don’t understand why people don’t eat them. I filet them and wash the blood line out under the faucet prior to freezing and they taste no different than largemouth

Cut the red out, soak in milk and hot sauce.

That is what I first heard them called at Toledo Bend, I had forgotten that. But I am not sure if we were talking about white bass or the hybrid White/Striped bass they have there. Not always that easy to tell apart.

Like el sagundo and others said, “filet” all the red bloodline off before you feeeze or cook them. For those and also white trout, I marinate in lemon juice, hot sauce and mustard for pan or deep frying. Enjoy

I call them bar fish too, they put up a good fight on light tackle.

I fry them like any other fish, my wife if really picky about fish and she eats them.
