I have zero interest in going to India but this thread has been a fascinating read.
On a somewhat related note (I guess), there's a very highly acclaimed highly rated Indian restaurant about a mile from my house. I dont' recall ever trying Indian food before but this thread has inspired me to go this weekend ha. What's a basic beginner dish I should try to get a good authentic exposure to the cuisine?

Chicken Tikka masala. Depending on spice tolerance probably go for medium. They likely have hot or "indian hot" on the menu which you should probably avoid first time.
Get the garlic naan bread. Samosas are also a good appetizer.
Tandoori chicken is probably another good safe option.
If they also serve Nepalese food, consider one of the meat filled Momos.
JMO for beginner.

Where were they that they needed security? I've been to Mumbai, Baroda, Pune, Haizeera a dozen times for work, never had a concern.

If you're going to make a trip that far, go to Thailand, Cambodia, and Vietnam.

Just returned from a work trip to Mumbai. Pretty amazing...good and bad

I'll help with some details. We landed in Bombay in Nov. 2010 at around 5 a.m. Changed some money for the taxi, drank coffee in a chic coffee place right outside the airport. Got a government taxi to Colaba (where the Gateway is). As soon as you leave the airport you are in a stream of everything that moves: people with carts, oxen carts, cars, big trucks, bicycles, motorcycles. Everything. This dude is driving like Michael Schumacher before his accident. He said "I drive taxi 12 years, no accident." That's when we decided to swim with the stream.
We found a hotel (previously researched) and my wife took a nap. I was wide awake and decided to take a walk. I left everything but 200 rupees in the room and went for a walk. Within 10 minutes this young dude came up to me and started a conversation. Long story short, he said there was a ceremony at his temple and would I like to come. I only had to pay the taxi, which turned out to be about 50 cents. So we get in the taxi and they let us out on a busy street. We walk into an ally and see 3 cremation fires. So I'm watching three cadavers burning in different stages. As you can guess, the whole deal was to get me to contribute money to pay for poor people's cremation. Needless to say, they weren't too happy with the 150 rupees I gave them.
That's only the first hour in Bombay. 6 weeks later we had many of those kinds of stories. It really is another world and totally worth experiencing.
