The most innovative writing in entertainment currently is in the video game space

I barely even qualify as a video game casual, getting the urge to binge play 2-3 times a year, but I recognize where innovation is occurring in story creation and writing currently. Most of the content originating in the movie industry continues to try resurrecting dead and dying tropes, structure, characters, plots, and beats. Filmmakers should be looking to the video game industry to breathe new life into the medium.
Off the top of my admittedly limited video game experience, here are just a few standouts:
What Remains of Edith Finch
Life is Strange
Firewatch
Resident Evil 7 & 8
Hellblade series
Limbo
Inside
(I've tried to limit my list to stories that aren't just well written but are trying to do something unique as well. Also limited my scope to relatively recent titles that I've actually played.)

My hope is that with the success of The Last of Us and Fallout that we see some more of those stories adapted in a way that they can lead to successful TV series.

Whether you like the content of the game or how it has been adapted, really doesn’t matter in this IMO.
The point still stands that its success will pave the way for other adaptations.

Its been this way for a long time. You can go back to Red Dead Redemption and the Metal Gear Solid series, especially the second one, for some great writing. The Arkham series has had better writing and acting than any Batman movie. For all the people complaining about movies putting strong women in established properties, there's the Horizon games that have a totally original and interesting story with a female protagonist. The Gears of War and God of War series all have great stories, especially the two newest God of War games. Lots of emotion and interesting characters for action/sci fi/fantasy games.

Ghost of Tsushima (PlayStation) is being adapted into a movie by the John Wick director. Have really high hopes for it.

Horizon Zero Dawn is a really cool original story I would love to see be made into a big budget TV show. Believable female lead checks a box for Hollywood. It’s the best storyline I’ve personally ever experienced in a game.

It's the exact opposite for me. The theme of Honor and following the samurai code vs doing what is necessary to save your people is the most interesting part to me. If you are into Japanese history from this era the main story feels really authentic.

I didn’t mean the theme. The theme of honor vs doing what is necessary is prevalent through all of it. The theme is excellent. I just meant the characters involved in the side stories are more interesting to me.

It's been that way for over a decade now, just my observation.
SF games, there's a couple brilliantly conceived and fleshed out. In movies and TV, it's stale and rehashed.

If he doesn’t write a haiku at a scenic vista each episode, it will not be a faithful adaptation.

It’s like HotD with the names too. Malenia, Melina, Marika, Millicent, Miquella, Godwyn, Godfrey, Godrick, Godefroy. It’s like GRRM’s biggest contribution was making it confusing as frick to remember who’s who.

Call me a misogynist, but I can't get into a show if the leading lady is absolutely awful to look at. Hopefully showrunners will do a better job at casting as they continue to adapt these video games for television.

Super Mario Bros was quality entertainment.
