Shrimp and bacon salad
Rao’s Alfredo sauce, chicken (rotisserie), and broccoli
Cheeseburger salad (this is homemade, but you can pick up a bunless burger with extra lettuce)
BLT salad
Crustless quiche
Taco meat stuffed mini peppers
Cheese shell tacos
Stuffed eggplant (Italian sausage and diced eggplant cooked down and stuffed into the shell and topped with cheese)
Cheeseburger lettuce wrap and baked zucchini fries
Cauliflower fried rice
Endless variations of tortilla pizzas
This one doesn’t look good, but it is SO good. Smothered okra with Rotel and shrimp. I usually make it much thicker than this.
Use mashed cauliflower as a sub for mashed potatoes or rice. I buy frozen mashed cauliflower.
Jalapeño poppers
If you have any questions about any of those, let me know.
I can only do straight meat or fish and a veg for so long, but I do try to have as many of those meals as possible.
To stay interested, I have to find interesting things to make. I get ideas from Instagram, mostly, and even TikTok, by following keto or low carb content producers. Good luck!

I keep soup in the fridge.
Any combo of meat,
Onions
Celery
Bell Peppers
Green Beans
Cauliflower
Diced Tomatoes.
homemade or box stock.
On work days a pint jar of this is usually lunch along with some cheese and pepperoni slices as snacks.

My go-to to sate my sweet tooth when trying to stay in ketosis was a piece of dark chocolate, usually the 70+% cacao kind. It's usually only 4-8 carbs depending on the size/%. If you're below your macro goals for the day, it shouldn't hurt.
For meals, you're best bet to maintain the diet is either vary the protein and/or rigorously meal prep.
Pork loin fajitas either as a salad/bowl/low carb tortilla.
Reverse seared pork tenderloin with a mustard cream sauce.
Our vegetables of choice were usually sauteed green beans or asparagus.
For coke cravings we got a Sodastream to make Spendrift type sodas. Just carbonated water and a splash of lemon juice. No extra sugar or artificial sweeteners.

I dropped 28lbs in about 3 months with this. Breakfast-a banana and 2spoons of peanut butter. Lunch was 2 packets of starkist flavored tuna with a little mayo so it’s not so dry. Nothing to drink but water or tea. Sensible dinner with lean meat, fish or chicken

Another delicious dish is stuffed chicken thighs.
Boneless thighs, spread with cream cheese and jalapenos on one side. Roll/fold and stick a toothpick through to hold. Grill/bake.

Lift weights and do cardio until you drip sweat six days a week. At least 30 minutes each. Don't eat like you're in college. After one month, you will look like someone your kids respect. Keep it up until you die. It's not complicated.

I’m a huge fan of roasted vegetables (broccoli, cauliflower, carrots, & Brussel sprouts are my favorites) so I’ll often make a large batch at the beginning of the week. I’ll use as a side dish to whatever protein we are having for dinner each night, or use it as a carb substitute. For example, if the kids have Mississippi chicken over rice, I’ll eat mine over broccoli. Same thing goes for taco night, spaghetti night, etc. I just pile the toppings on a bed of roasted veggies.

Carb Balance tortilla topped with Rao’s marinara with pepperoni and your choice of cheese is the cure for my pizza urges.

Do you finish the mini peppers off in the oven? If so, what’s the time and temperature?

Yes, at 350. I think it was only 10 or 15 min.

Thanks for all the ideas in this thread. Started today on a diet. Need to lose 25-30 lbs. used to be so easy to do. As I have gotten older it has been hard . Put on about 20 pounds during Covid and been fighting it ever since .

Cracklins are a good no carb snack.
Get you some nice thick cut pork loin chops.
put them through an egg wash.
crush the cracklins up really well.
cover the egg washed pork loin chops with the crushed cracklins. season with lemon pepper.
cook in air fryer.
delicious.

I find if I'm worried about the taste or variety, I'm not in the right diet mind set. I want it to taste bland and not really enjoyable. I got to feel like I'm only eating to survive. I'm mostly eating cold chicken and broccoli. I'm fricked up in the head though.

ill get on my soap box for one second and say i dont believe in "no carb", "paleo", "keto" or whatever restriction diets. just calorie in calorie out. dont deprive yourself
but if your all set on that
jerky, boiled eggs, protein bars with low carb ratios, protein shakes (whey is tastier, casein shakes will keep you fuller longer), nuts, carrot sticks (basic but i like em), greek or icelandic yogurts (ZERO is a new brand that makes really tast protein heavy yogurt cups), cracklins, hog head cheese, sardines, pickles (learn your own for bonus fun and variety).

Low carb tortillas are very versatile.
Yes.
Also just do whatever and watch your portions. If you like rice you can cut a regular serving by more than half and you still have a decent amount.

Cream Cheese finds its way into almost everything I make... too bad its becoming harder to find these days

We used to make nachos using mini peppers cut in half in place of chips. We would use rotisserie chicken sometimes and ground beef sometimes

So I started a low carb diet 1/1. I’ve been eating grilled fish/chicken and veggies. It gets old quick. Looking for ideas for meals and especially snacks between meals or any tips in general. My Achilles heel are sweets. Love dessert. I started at 245 and am down 13 lbs so far. 195 is my target by Father’s Day. My kids are on me to lose weight
TIA
yea dont start trying to recreate desserts, the idea should be to change your habits, not just lose the weight.
get over it as keto/low carb isnt magic, still have to be in a caloric deficiet to lose bodyfat.
as far as what to eat....stop just doing grilled chicken and fish.
Start eating steaks, eat the shite out of steaks, learn to do lamb, pork, chicken thighs, salmon
essentially learn to like fattier cuts.
make hamburgers, hamburger steak(dont use flour), ribs, pulled pork, brisket
use the ghughes sauces to make the above, use the chili sauce or teriyaki sauce to make glazed salmon or habichi chicken, shrimp and steak.
use the pork panko off amazon to make air fried chicken and air fried fish
eat the shite out of eggs and bacon
sausage, smoked, breakfast, or italian is always good. loved some good italian sausage cooked with some onions, peppers and couple eggs.
use riced veggies to replace rice
make kabobs, fajitas, stuffed grilled pablono peppers, sheet pan meals etc
tons of mexican/tex mex dishes you can do.
Here is an easy example of this:
breakfast- 4-6 eggs scrambled with some grilled sausage
lunch- 8-10oz hamburger with grilled onions, cheese, mayo in a lettuce wrap or air fried chicken thighs and some grilled veggie skewers.
dinner- usually where i get creative. but lets say beef and shrimp fajitas with onions and peppers using lettuce as the wrap. or lamb lollipops with some grilled veggies and an avocado.
in the end you will have to learn to embrace the suck if you really want to make a change. if not you are just going to go back to old habits.
develop discpline and embrace the suck!!
