I believe adding all citrus at the end makes a difference. Maybe boiling the peels will add some oils but i think the flavor boils out if you add it too early. I mostly just add the lemons for looks and add the bottle of lemon juice and a frozen orange juice concentrate at the end for flavor.

I approve of understanding the science behind food. What the exact science is, I don’t know.

I know some oils like lemon oil can break down and evaporate. I don’t think juice does. The question will be does adding juice (or whole oranges or whatever you’re adding) add citrus oil to the boil and if so, is it evaporating?

Just think about how much granulated seasoning and salt you have to add and how long you have to soak the crawfish. They aren’t exactly sponges for flavor. The oils of citrus are likely less dense than water and probably just hang out on the surface.

I think people smell the citrus and associate that with tasting it

I find that halved oranges are sponges for the rest of the seasoning in your boil, and will result in a less flavorful/spicy crawfish. They suck all of the good stuff into the halved orange.

If you want the citrus taste, the best way is to add frozen concentrate.

How are halved oranges any different from halved lemons in this regard? They are mostly water / liquid, so I don't see how they could be more absorbent than anything else thrown in the boil. Plus, you are supposed to squeeze them into the boil. I've never seen bloated citrus in a crawfish boil, ever.

Oranges are really good. I've done mine with pineapples as well. It's a nice touch

Slice you lemons about 1/8 of inch long. Add them to the pot when you put them soak or when you dump them in the ice chest.
