When they turn “football stadiums” into baseball fields or other configurations, it’s because of removable seating.
correct. Our stadium is constructed out of concrete. There's no way to position a baseball field at TS absent having ridiculous dimensions like the Savannah Bananas do when they play at football stadiums.

How deep would the short side fence be from home plate?
About 200, maybe 210 max
For comparison, the LSU softball field is 200 down the foul lines.

A basketball game would work, but not w McMahon.

Mahtook mentioned it in their pod that they should do that as a game.
I saw that clip as well. They were convinced that it was a good idea. Also part of his reasoning was that they play football games in Yankee Stadium. Not sure how that correlates. It could maybe be cool, but there's no way that a legitimate baseball game should be played there, and that would definitely affect the attendance. You aren't getting anywhere near 100k people to go watch an exhibition game.

The only way it would probably work is to have one of the outfield fences (probably RF) be abnormally high so as to make it play larger.
It’s a neat dream with zero practical application.

The field in PIMger Stadium is too vertical to be re-configurated into a baseball field.
OP apparently hasn't been inside the Coliseum enough to realize this.

LA coliseum was used by the dodgers while dodger stadium was built. The bananas played at Raymond in Tampa. LSU baseball could play a exhibition against the bananas would sell out the lower bowl.

Full lineup of right hand hitters.

Turn the field into a baseball field.
They'd have to build one and maybe two 40 feet high Green Monsters like back in Skip's days when we'd play a game or a series in the Superdome.
