This happened with a guy from our office and the opposite occurred. He got successfully sued and had to pay a shitload of money.

True story - I had a client once that started a carpet cleaning business (I just handled the original business formation). He hired a friend to do the actual work that had experience. This guy's previous company made him sign a non-compete
Anyway, this previous company was owned by some attorneys and they sued this guy. He represented himself (guy was no rocket scientist either). Case got tossed - moral of the story - some people do some petty arse shite. I mean a carpet cleaner with a CNTC - seriously? They tried to claim that they "sent him to training" which consisted of two days of some stupid course. I was shocked that they even tried TBH.

In my limited knowledge La will have a non compete stand if it:
Specifies a reasonable time frame, 1 to 2 years.
Specifies Parishes specifically that youare excluded to work.
Incldues a quid pro quo, what did you receive? Job specific training? Bonus? Protected territory?

My note files used GE as an example why something like this is too broad. The attorney never saw one for GE, but use a scenario like GE because if they had something like this their employees would literally not be allowed to work anywhere do anything because GE has their hands in everything.

The non-compete issue has been discussed well enough... so I'll play along with your other question.
Quality lawn care - especially here in SELA, trying to find a good quality lawn care person is getting harder and harder. Plenthy of kids and illegals who will do a crappy job. But good job? I feel like you could make a killing here.
What kind of insurance are you in? Could you ply that experience into consulting on claims?

Not an employment lawyer and not giving legal advice, but the existence of a severance clause is an important fact.

I've litigated a similar case. In LA the dude you reference may not only violate a non-compete agreement, but possibly trade secrets laws and unfair trade practices laws

Why limit yourself to 1099?
Go get you a barge, an old excavator with a pile driving attachment and drive pilings on the nearby rivers for docks and boat houses.
If you're really ambitious, get you another person or two, or three and build docks and boathouses and bulkheads on the pilings you drive.
