Because you (the collective "you") also demand that LSU (or your favorite college team) win at the highest level. Coaches in states like Florida, Texas, Tennessee can use the no state income tax climate as a recruiting advantage. Come to Tennessee and pay no state income tax on the $2M you're going to earn....or go to LSU and give the state 3% of that. It's the same recruiting advantage businesses in certain states use to attract talented people in other lines of work.
Fans/donors drive the market. As long as the demand that LSU (or your favorite school) win at a championship level and anything less is insufficient, then there is the incentive to create advantages to help reach that goal.

And that’s going to be the argument by Gov Landry and many of the state legislators to make this carve out in the Louisiana tax code for NIL earnings. Complete idiotic pandering.

Some states can be petty and enact a jock tax on just visiting players. California enacted it in ‘91 in response to Michael Jordan beating the Lakers.
Could throw in an extra level of petty and say that any athlete that transfers from a school in our state to a school in another state in the same conference faces an additional penalty.
Nothing like state tax codes to make people think twice about their decisions.

Do I, personally, think it is ridiculous that someone making $3M this year wouldn't have to pay a state income tax whereas you and I will? Of course. But when the "customer" demands excellence, and only excellence, concessions are made to try to make that happen.
We, as the fans, drove college football to being a huge entertainment business (there wouldn't be massive TV contracts if there was little interest). So it's hard to complain when it is treated like the huge entertainment business it is.

The young men and occasional woman may not realize that state taxes are minor compared to Federal. Oh, well, they will learn from real life, even if they are too busy to learn from their college classes.

Property taxes were staples of pre and post revolutionary war America. The founding fathers largely supported property taxes (versus income taxes).
