Original Black Betty Leadbelly
There are some who argue that Black Betty was originally a British marching song about their muskets. The flintlock musket commonly known today as the Brown Bess, was sometimes also called Black Betty in the late 18th century.

Van Halen - You Really Got Me and Pretty Woman
I'd rate their versions of Where Have All the Good Times Gone? and Dancing in the Streets as being better than both of these.
Van Halen’s Dancing in the Street has grown on me especially in comparison to original and to other covers (Bowie and Jaguar’s was the worst). I read somewhere that Eddie said some back at the time stated it was too close to original, which seems way off as far as the music they did for it, but he said he put as much into it as some original songs. I think the moog synth along with whammy usage was a sound he was working on for something original and got co-opted into the song by Roth & Templeton. He ended up overdubbing it for this song trying to get right sound which wasn’t the norm for them especially during early Van Halen. I like the nod to original Michael Anthony and Eddie do with some of the background singing. The Struts cover was based on Van Halen’s version.
“ Where Have All the Good Times Gone” was definitely better than original.
I also like their cover of “You Really Got Me” better with the fuller/bigger guitar sounding rif and the added guitar stirring things up after some lines and leading to the chorus. I actually do like the guitar solo by the Kinks more than Eddie’s version. It has a kind of honky tonk sound, but I don’t think Eddie using that sound for solo on Van Halen’s cover would have worked with the overall fuller/bigger guitar sound I prefer.
Kind of the same with (oh) Pretty Woman especially for an entire song to entire song comparison, but the movie and various takes on it in film and tv definitely work better with original and usually sounds fuller than original version did (probably got it remastered sooner than it would have as well).

UB40- I can’t help falling in love with you
I was reminded of the Sliver soundtrack recently which I remembered I really liked. Something about this song I loved.
The whole soundtrack was really good.

Sound of Silence - Disturbed (Simon & Garfunkel)
Land of Confusion - Disturbed (Genesis)
honorable mention since I can't go as far as to say it's better than the original, but it's really damn good, is Heart's live recording of Stairway to Heaven

Suspicious Minds by Fine Young Cannibals. The recorded version is better than the Elvis recorded version.
Roland Gift always has said though that Elvis came to him in a dream and helped him out.
However the Elvis live version blows every live version of anything away.
