Europeans are racially mostly white. But they have many different ethnic groups. It's how you can tell a Spaniard from a Swede.

Then how do you tell a Jewish European from another European or a Semitic Jew from other Semitic peoples (without knowing anything more)? Their ethnicity is European or Semitic. Their religion is Judaism.

Jews are a religious community, no longer a race; at one time they were a distinct Semitic people, or "race", originally from what is now southern Iraq.

The term "black" refers to persons of sub-Saharan African origin, which doesn't include other races with black skin color, such as ancestral Southern Indians or Sri Lankans. Again like the term "Jew", "black" has morphed into defining a community, this time based on political affiliation.

Jews are different in that they are both people of the Jewish religion and a culture. Not all Jews are religious, even though the term Jew is specific to a religion. It is quite odd if you ask me.

You would ask them.
I am an ethnic Cajun. I have my Cajun family tree traced back to the 1700s in Normandy, France and then Canada. I was born and raised in the center of Cajun land, New Iberia.
Today in Bossier City you could not tell I was Cajun by my manner or my speech. You'd have to ask me.

The human race. I always viewed all humans as one race.

I've known and worked with a lot of Jews. They will tell you that they are Jewish. But almost none of them practice any religion at all.
They will also tell you that American Jews will soon no longer exist because of intermarriage.

You only listed one branch of your Cajun family tree, from Europe. What about any Atakapa Indian and/or African ancestry you may have?

Fun fact.

Most of the people claiming "Jewish heritage" have no connection to the ancient "Hebrews".

All Cajun ancestry is from France. As for my other tree lines I'm Jewish and Spanish.

Probably true in many parts of the U.S., but not in the North East, where there is the highest concentration of Jews outside of Israel.
In the N.E. a large number of Jews very much practice their religion, take Sabbath on Saturday, observe religious holidays, go to Synagogue etc.

Also, they are definitely not a single ethnicity. Maybe multiple ethnicities. In Israel, you will see Europeans, North Africans, Arabs, Iranians. Basically Jews from all over the world, who have aggregated in the country.

That by definition of "Cajun" is true, but many Cajuns mixed with the populations already in Louisiana.
