There is a big difference between wild caught and pond raised. Not fish wise, but usage.

I would think a lot of the traditional poboy places slinging catfish use pond raised catfish.

Anyone know what the wild caught market looks like these days? Seems I haven't seen anyone promoting wild caught in a long time. Maybe I just don't notice it.

For those that say bottom feeder is bottom feeder…yeah, the imported shite swims in a pond , overcrowded, with human sewage, fertilizers, and everything else running into it.

Much different than farm raised US fish without all that literal shite.

Imported food is garbage. It’s that simple.

You sure about that timeline? He released changes in latitudes changes in attitudes 46 years ago. By 30 years ago he was a pretty big deal.

I used to hear Middenforfs promote that several years ago.
Sphars is the only place I can think of off the top of my head that has wild caught.

Zero restaurants use wild caught catfish . Maybe a shack that someone’s uncle sells to the neighbors, something like that… the texture is very different. Even the “good” catfish is discernible from the other ( real catfish) if you are around it enough.

It sounds strange and certainly not my tastes but I think some people feel "safe" with chain restaurants. Not saying OP, he could have been thinking about someone in his group or not factored in at all for all I know. But I can see certain picky eater types feeling safe going to a chain for some reason. I guess because everything has been focus group tested and blanded down to the lowest common denominator. Same folks that won’t try new things when ordering because "what if I don’t like it?"

Anytime the menu reads “fish” it’s swai, state law says it has to be farm raised catfish for menu to read “catfish”

Yep. I used to think they had a pretty decent RB poboy as well, but like everything on their menu, it was overpriced

swai quality is more consistent than catfish unfortunately, at least with what is available from most major suppliers. catfish frequently has a "fishy" taste to it that swai doesn't have a problem with. it's unfortunate. good fresh catfish is the best, but i don't really see how our supply chain can sustain that at a level where every roadside eatery serving a fish poboy can get quality catfish.
