Didn’t like it the first time I ate it. Just had it from the wrong place. If the broth is off the whole dish sucks

Yea, I just drop in the fresh jalapeños for heat...and I don’t want it sweet. Sriracha is for the spring roll peanut dip. Yum.

I could eat it every day as well. I love soups. Gumbo, ramen, pho, and creamy potato soup could keep me alive with a smile on my face.

It's like anything else. Major ethnic foods in the US are enjoyed first by trendsetters, who probably legitimately enjoy them but also exaggerate their preferences for any number of reasons. Some of them may genuinely have refined palates and can distinguish great from good. Then the try hards follow, being even more vocal about their love for said foods, with far less genuine appreciation/ability to distinguish good/great examples.

Finally regular people follow and are disappointed by what is, in reality, an enjoyable but average food of another culture that is made out to be "of the gods" by try-hard westerners.

I never get Pho and always get Bùn which is the vermicelli bowl.
I'm not big on broth soups unless it's cold outside.

My gripe with vermicelli lately are the places that use cheap shredded iceberg and basically no herbs, which are most places

Next time, if there is one, order it with Coconut Curry broth. Most places will give you an all-knowing nod. Crappy places will not.

You an tell the bun is going to be good if the place smells like sewer. Good fish sauce is the key to tasty bun.

Did you even add hoisin sauce and some lime? That alone could easily make or break the pho.

Also a glass of lemonade too.

I make a home-made variety which is as good as any other home concoction I do (etouffee, chili, red beans, etc)
