I keep leftover lunches of brown rice, a protein and a veggy in the freezer for just this scenario. But otherwise I usually will make a stir fry of rice, egg and whatever veggy is available. I'll throw in chicken, pork, shrimp or salmon depending on what is in the fridge.

Grab my glass pie dish, throw in a half stick of butter and the juice of two lemons in the microwave for about a minute to melt the butter. Stick two tilapia fillets in pie dish swirl pie dish around to cover fillets in lemon and butter. Zest a lemon shake a little garlic salt and a little Italian seasoning on top of the fillets for color. Bake in my ninja Air fryer (air bake setting) 425 for 10 minutes. Could just bake it in the oven but the Ninja I don't have to take the time to preheat. Box of couscous (boil water with some butter dump in box of couscous and let sit for 5 minute). Takes a little more than 13 minutes from start to finish. Say 15 if you are taking your time. Serve on top of couscous. Be generous with the lemon butter sauce from the dish as it flows off the tilapia and soaks into the couscous.

Tonight it was thin cut chicken breasts. They were going to go on a bagged salad but when I opened the bag, which was still 4 days from the best by date, it smelled horrible. So we tossed that and grabbed a can of seasoned green beans and made a box of rice a roni. We always keep stuff like that, it’s quick and the kids will all eat it.

I can put a nice salad together in just a few minutes. I keep a variety of ingredients handy.

Take some cooked chicken breast, sautéed onion and bell peppers , shredded cheese and make a quesadilla. Could even make a mayo/sour cream chipotle sauce to dip it in .

You can find like 60 quick meal in a box, that are probably quicker than jambalaya. And it’s hard to eat crappy jambalaya when you know you can make the real thing.

In my pre-keto days I usually had some leftover rice in the fridge. Maybe add some canned beans and seasoning, or a quick stir fry or just rice, peas, mushrooms and butter. From start to eating <15 minutes.

Now I put cheese between 2 low carb tortillas, spoon a little salsa, into a frypan for a 5 min quesadilla. I also love sardines, so many options.

I'm retired and love to cook. I will most often cook food in bulk and package it up to freeze in smaller portions like quart freezer bags to defrost as I need them.

I'll often cook 4 lbs. of red beans, 3-4 gallons of gumbo, red gravy with meatballs and Italian sausage, soups, etc.

If you have your weekends off, that would be a good time to spend an afternoon fixing things in bulk to freeze and use as needed. A lot of the things I cook don't require a lot of attention other than the occasional stir to keep things from sticking after about an hour of prep and getting things started initially.

Usually some sort of stir fry. Chicken, carrots, broccoli, peanuts, and some spicy ginger soy sauce.

I'm old school--I always have home cooked food in the freezer, ready to defrost whenever I don't feel like cooking. Gumbo, meatballs in tomato sauce, red beans, black bean soup, spicy lentils, chili, various soups--there is always something that can be defrosted in the microwave or reheated on the stove. Whenever you cook something that's freezer friendly, at least one or two portions should be stashed away for later.

What is now called "meal prepping" was taught to me as basic home kitchen management by two working parents, living in a semi rural area w/o fast food & limited restaurants.

Quick spaghetti

Brown ground meat, add can of sauce and cook noodles. Probably takes 15 minutes.

If I'm really going to use the stove, something with ground beef... spaghetti or cheese ravioli with meat sauce or tacos.

We make a hash with ground beef (or ground sausage), potatoes, onions, and peppers that is pretty quick and easy. Fry an egg and top it off with some Cajun Power Garlic Sauce
