That’s what happened with me. I tried it without having any idea what I was watching and didn’t really give it a chance.
Couple years later, I gave it a second shot and wow!
First three seasons are incredible. Things level off a bit towards the end but it’s still really damn good.

I know this is Disney stuff, but I really enjoyed The Mandalorian and Andor. Also fond of Boba Fett. There was a show called "Salvation" that had an Elon Musk type character that was good but then the 2nd season came out and I only lasted through the 2nd episode.

Just sign up for Apple+ and you'll be set for a while. They are producing better Sci-Fi than anyone right now and it's not really even close.
Severance - Just top tier TV
Dark Matter - One of the best Sci-Fi's in the past couple years for sure
Foundation - I stopped after 6-7 episodes because it screwed the source so bad but if that doesn't bother you, by all accounts it's a very good show
